4Pour the hot mixture over the previously melted white chocolate. Add white food colouring if desired.
5Blend with a hand blender, keeping the blender head below the surface to avoid incorporating air.
6Chill in the fridge, covered with cling film touching the surface, for at least 12 hours.
7The next day, gently reheat in a bain-marie to 35–37°C before use.

The application technique is the same as for white mirror glaze. You simply replace the white chocolate with dark chocolate, and no colouring is required. For a glossier finish, choose a couverture chocolate with at least 55% cocoa. For a more intense flavour, add 80 g of sifted cocoa powder to the hot ingredients before incorporating the chocolate.

Gelatine-free mirror glaze

For a vegan version or one suitable for customers who avoid animal-derived gelatine, several alternatives exist. These options require an adaptation of the basic recipe and prior testing before being approved for production.

Agar-agar

A plant-based gelling agent of marine origin. Allow approximately 6 g to replace 20 g of gelatine. Please note that the final texture is slightly different, being less melt-in-the-mouth.

NH pectin

Carrageenans

How to apply a mirror glaze perfectly

3 Place the frozen dessert on a rack over a drip tray.
4 Pour the glaze in one smooth motion, from the centre outwards, allowing the excess to run off naturally.
5 Leave to drain for a few seconds, then run a spatula underneath to prevent any drips when transferring.
