Ingredients

  • SUGAR DOUGH
  • Soft Butter - 270g
  • Icing sugar - 105g
  • Fine sea salt - 2g
  • Flour - 240g
  • -
  • LIGHT VANILLA CREAM
  • Milk - 320g
  • Egg yolk - 76g
  • Sugar - 64g
  • Cornflour: 9g
  • T55 Flour - 15g
  • Gelatin Mass - 15g
  • Vanilla bean - 1
  • Whipped cream - 100g
  • -
  • VANILLA WHIPPED CREAM
  • Cream 35% - 300g
  • Sugar - 30g
  • Vanilla bean - 1

Recipe steps

  • SUGAR DOUGH: Cream the butter and icing sugar. Mix the flour and the fleur de sel. Add the flour to the previous mixture and mix until you obtain a homogeneous mixture. Place in the Easy Tarte moulds. Baking time: 180°C for 15 minutes.

  • VANILLA CREAM: Heat the milk and vanilla. Whisk the egg yolks and sugar together. Stir the cornflour and flour into the previous mixture. Pour over the milk and boil for 2 minutes. Leave to cool in the fridge. Fold the whipped cream into the cooled custard and mix gently.

  • VANILLA WHIPPED CREAM: Mix the ingredients together. Beat with a mixer.

FINITION : Une fois les fonds de tartelettes cuites, placez-les au congélateur. Démoulez les fonds de pâte sucrée. Garnissez à l’aide d’une poche les fonds de crème légère vanille. Coupez les fraises et placez-les sur la tartelette. Réalisez des quenelles de chantilly et disposez-les sur le dessus des fraises. Ajoutez des pousses de shiso pour le décor.
