RECOMMENDATIONS FOR USE OF SILICONE SPONGE CAKE MOULDS
DESIGNED FOR FOOD CONTACT, ALL APPLICATIONS:
Maé professional silicone Sponge cake molds are made with 100% premium silicone and are suitable for food contact. Maé silicone moulds comply with the specifications of article 6 of the decree of November 25, 1992 for use with aqueous and acidic foods, as well as fatty foods for which the 85/572/EEC directive provides for a reduction coefficient of 3 or more (bakery products, pastries, confectionery, fruit, fish, cheese, chocolates, ready-made meals…).
CAUTION :
- Do not use sharp or abrasive tools or accessories.
- Do not bring the plates and molds into contact with a flame. The risk is the simple disintegration of the material since it is self-extinguishing.
- Adjust the firing times and temperatures according to the oven used. It is recommended to use a perforated support (perforated aluminum plate or grid).

HOW TO AVOID THAT YOUR SPONGE CAKE FALLS DOWN ?
There are many reasons why your Sponge cake might fall apart after baking, here are the rules from different chefs to keep it from falling apart:
- Be careful with the baking time: the baking time varies according to the size of the mould.
- Do not open the oven before the end of the cooking time: a draft before the end of the cooking time can cause your Sponge cake to collapse.
- Put your Sponge cake in the oven quickly: if you let it rest before baking, it will fall apart.
- Respect the quantities indicated in your recipes.
- Do not bake at too high a temperature: an excessive temperature may cause the dough to rise too quickly, which will cause it to fall back.
By following all these rules, your Sponge cake will not fall after baking.
HOW TO MAKE A SOFT AND AIRY SPONGE CAKE?

- Mix the yeast and flour.
- Separate the egg whites from the yolks, and beat the whites until stiff.
- Add the sugar.
- Add the egg yolks, then the yeast and flour.
