At Maé Innovation, we offer professional bakery mats in different sizes to meet all professional needs. Our smallest bread baking mat measures 310x510mm and the largest mat is 600x800mm. So, how to choose the bakery mat size best suited to your needs? Here are some tips to help you choose the best bakery mat.
First, you must take into account the size of your professional oven. Make sure the bread baking mat fits the dimensions of your oven. The larger your oven, the larger the baking mat you can opt for, allowing you to produce more!
To make your choice, you must also consider the quantity and size of what you want to bake. With our silicone-coated fiberglass bread baking mats, you can bake all your breads, baguettes, pastries, specialty breads, but also pizza dough, choux pastry, and even sweet doughs. Thanks to the perforations in the mat’s mesh, air circulation is facilitated. This achieves a crusty result. Therefore, you must choose your mat based on the size of the breads, or the quantity of breads you wish to produce on a single bread baking mat.

Recommendations for use of our bread baking mats
DESIGNED FOR FOOD CONTACT, ALL APPLICATIONS:
Bakery baking mats are suitable for food contact under FDA 21 CFR 177.1550 and European standard 10/2011.
OPERATING TEMPERATURES:
Bakery mats withstand temperatures between -40°C in continuous contact and + 250°C in continuous contact.
STORAGE:
We advise you to store the mats flat.
EASY CLEANING:
- Clean with a non-aggressive damp cloth, possibly a degreaser and hot water at 70°C.
- After using a degreaser, rinse with clean water then regularly check the pH. If it is not neutral, repeat the rinsing.
PRECAUTIONS:
- Do not fold the bakery mat as this may create weak points.
